Surfactants

A surfactant molecule & a surfactant-stabilised oil droplet.

A surfactant molecule has a hydrophilic (water-loving) head that is attracted to water molecules and a hydrophobic (water-hating) tail that repels water and simultaneously attaches itself to oil and grease.
